Sky By The Water: Let the flavours flow...

Our Sky Bar has transformed into something spectacular, Sky By The Water, an exciting new space which promises classic cooking, cocktails and Afternoon Tea, re-imagined in a relaxed, rooftop setting with stunning views. Drinks and cocktails have been flowing in the bar since late December and the restaurant opened its doors on Thursday 10th January.

The menu at Sky By The Water features classic comfort cooking on another level. Highlights include confit belly of pork with sweet potato pomme purée, buttered green cabbage and bacon and drool-worthy desserts like salted caramel millionaire’s shortbread with butterscotch crémeux and malted milk ice-cream. All the yums.

The menu has been crafted by Head Chef Aaron Darnley, whose culinary career began aged just 15 and has seen him working with renowned local and national chefs . Make sure you save room for dessert too, with an unmissable selection from our pastry team headed by Darryl Collins, one of the nation’s top patissiers and our star finalist on Channel 4’s Bake Off: The Professionals in 2018.

You can now also enjoy a very special  Afternoon Tea, featuring a mix of traditional finger sandwiches and  showstopper sweet treats including delicious cakes and scones all handcrafted by Darryl and his team.

Sky By The Water is also be the new spot for Genting Hotel guests to enjoy breakfast with a view, and private dining options are available for up to 48 people. Or, for the ultimate premium experience, try the dedicated Chef’s Table for up to 10 people. More details on these dining experiences coming soon…
